Ingredients:

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/2 teaspoon salt

– 1/2 cup butter

– 1 cup white sugar

– 2 eggs

– 1 1/4 teaspoons vanilla

– 1 1/2 cups chopped apples

– 1/3 cup packed brown sugar

– 1 tablespoon all-purpose flour

– 1/8 teaspoon ground cinnamon

– 1 tablespoon butter

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
  2. In a medium bowl, mix flour, baking powder, baking soda and salt.
  3. In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.

– 1 & 1/2 cups all-purpose flour

– 3/4 cup white sugar

– 1/2 teaspoon salt

– 2 teaspoons baking powder

– 1 egg

– 1/3 cup milk

– 2 apples – peeled, cored and chopped

– 1/2 cup white sugar

– 1 cup sifted all-purpose flour

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 1/4 teaspoon ground cinnamon

– 1/4 cup butter or margarine, melted

– 1/2 cup packed brown sugar

– 1/2 cup white sugar

– 1 egg

– 1 teaspoon vanilla extract

– 1/2 cup chopped apple

– 1/2 cup finely chopped walnuts

Ingredients:

– 2 cups all purpose flour

– 1 cup old fashioned oats

– 1/4 teaspoon salt

– 2 teaspoons cinnamon

– 2 teaspoons baking powder

– 1 cup granulated sugar

– 3/4 cup vegetable oil

– 2 eggs beaten

– 1/2 cup plain nonfat Greek yogurt

– 1 cup applesauce (homemade or chunky style is best)

– 1/2 teaspoon vanilla extract

GLAZE

– 1 cup powdered sugar (add more if needed to thicken)

– 1/4 cup applesauce

Instructions:

  1. Preheat oven to 350 degrees, and grease loaf pan. I used a 9.25 by 5.25 by 2.75 inch metal nonstick loaf pan.
  2. In a large bowl, mix by hand flour, oats, salt, cinnamon, and baking powder. Set aside.
  3. In another bowl, mix sugar, oil, eggs, yogurt, applesauce, and vanilla, then stir into dry ingredients by hand until just combined.
  4. Scoop the batter into the loaf pan and bake for 45-48 minutes, or until a toothpick inserted into the center comes out clean.
  5. Remove from the oven and whisk together the powdered sugar and applesauce for the glaze.
  6. When the bread has cooled for just a bit, pour the glaze over the top. It will settle into the cracks and keep the bread moist. The glaze will set, but will remain slightly sticky.

– ⅓ cup brown sugar

– 2 teaspoons ground cinnamon

– 3 tablespoons butter, melted

– ⅓ cup chopped walnuts or pecans

– 1 Granny Smith apple, cored and sliced into 8 (1/2-inch) slices

– 1 (8-ounce) can Pillsbury Original crescent rolls

Instructions:

  1. Heat oven to 375°F. Line cookie sheet with parchment paper. Set aside.
  2. Unwrap the crescent roll and separate the triangles.
  3. Combine sugar and cinnamon in a small bowl.
  4. Evenly spread butter onto each triangle.

For the crumb topping:

– 1/2 cup flour

– 1/2 cup old fashioned oats

– 1/2 cup brown sugar

– 1/2 tsp baking powder

For the Apple filling:

– 3-4 large Granny Smith apples, peeled and sliced thin

7. Sweet & Salty Bourbon Cinnamon Pecan Caramel Apples

Ingredients:

– 1 egg white

– 2-3 tablespoons bourbon

– 1 tablespoon vanilla extract

– 1/2 cup brown sugar

– 3/4 teaspoon cinnamon

– 1/4 teaspoon kosher salt

– 3 cup finely chopped raw pecans

For the caramel:

– 1 cup heavy cream

– 1 cup sugar

– 1/2 cup light corn syrup

– 1/2 cup bourbon (you may use apple cider or water)

– 1/4 cup butter

– 1 tablespoon vanilla extract

– 1/2 teaspoon kosher salt

– 1/2 cup chocolate chips, melted

– 6 of your favorite apples (I used granny smith and honeycrisp)

– 6 twigs or wooden sticks

Instructions:

  1. Preheat oven to 350 degrees F. Line a baking sheet with foil or a silicone baking mat.
  2. In a bowl whisk together the egg white, bourbon, vanilla, brown sugar, cinnamon and salt until frothy. Add pecans and stir to coat evenly.
  3. Transfer nuts to prepared baking pan. Bake for 15 to 25 minutes, stirring occasionally, until toasted. Allow to cool 10 minutes and then remove from the pan and add to a shallow dish that will allow you to easily roll the apples in the pecans.
  4. While the nuts roast, start the caramel. Push the twigs or wooden sticks into the top of the apples. Return apples to the refrigerator until caramel is ready for dipping. Line a baking sheet with wax paper.
  5. Place sugar, corn syrup, and bourbon in a large saucepan. Bring to a boil, boil, without stirring, 9 minutes or until light golden.
  6. Add the heavy cream, butter, vanilla, and salt, slowly stirring into pan. Boil until candy thermometer reaches 235°, stirring frequently.
  7. Swirl apples in caramel, allow the excess caramel to drip off and then drag the bottom half of your apple through the pecans. Place on baking sheet lined with wax paper.
  8. Repeat with remaining apples. Let the caramel apples set for about 15-30 minutes (in the fridge or on the counter), then drizzle each apple with melted chocolate. Dig in and get messy!

Pastry:

– 2¼ c. unbleached unsifted all-purpose flour

– ¾ tsp. salt

– 10 tbsp. unsalted butter

– ½ c. Vegetable shortening

– 6 tbsp. very cold water

– 2 tsp. Apple-Cider Vinegar

Filling:

– ¾ c. sugar

– 1 tbsp. sugar

– ½ tsp. ground cinnamon

– ½ tsp. fresh-grated nutmeg

– 2 tbsp. tapioca flour or cornstarch

– ¼ tsp. salt

– 3 lb. apples

– 1 tbsp. fresh lemon juice

– 2 tbsp. unsalted butter

Instructions:

  1. Prepare Pastry: In the bowl of a food processor fitted with chopping blade, process flour and salt 5 seconds. Add butter and pulse 4 times. Divide shortening into 4 lumps and add to bowl. Pulse 4 times and scrape the bowl. In a liquid measure, combine the cold water with vinegar. With machine running, slowly add mixture in a steady steam through the feed tube. Keep pulsing until dough almost gathers together. There should be several large clumps of dough in the bowl. Remove the dough and gently press together. Divide dough into two pieces, one slightly larger than the other. Shape each piece of dough into a 6-inch disk, dust with flour, and wrap tightly in plastic wrap. Refrigerate at least 1 hour.
  2. When ready to bake, place one oven rack in lowest position and another in the center of the oven. Place a heavy baking sheet on the lower rack and heat oven to 450 degrees F.
  3. On a lightly floured surface, roll the larger pastry disk into a 13-inch circle. Fold dough into quarters. Center the point of the dough in the center of a 9-inch pie plate, then unfold the dough. Lift the overhanging edge of pastry all around the pie plate so that the pastry lines the plate loosely but snugly; do not stretch the dough to fit. Leave excess pastry overhanging edge. Between 2 sheets of floured waxed paper, roll remaining pastry disk into a 12-inch circle.
  4. On a lightly floured surface, roll the larger pastry disk into a 13-inch circle. Fold dough into quarters. Center the point of the dough in the center of a 9-inch pie plate, then unfold the dough. Lift the overhanging edge of pastry all around the pie plate so that the pastry lines the plate loosely but snugly; do not stretch the dough to fit. Leave excess pastry overhanging edge. Between 2 sheets of floured waxed paper, roll remaining pastry disk into a 12-inch circle.
  5. Spoon filling into pie plate, mounding apples in center. Distribute butter pieces evenly over filling. Lightly brush overhanging edge of pastry with water. Remove top layer of waxed paper from pastry circle; invert pastry on top of filling. Press edges to firmly seal. Using scissors, trim excess pastry to within 1/2 inch of rim. Flute edges. Lightly brush the top crust with water and sprinkle with remaining 1 tablespoon sugar. Using knife, cut four slits in top crust.
  6. Place pie on baking sheet; bake 15 minutes. Transfer the pie and baking sheet to center rack and reduce oven temperature to 350 degrees F. Continue baking until crust has browned and thickened juices are bubbling — about 1 hour more. Transfer pie to wire rack; let cool completely before serving.
